Lemon Rice

This is a super simple recipe with very few ingredients. It's a good breakfast or lunch option. It's great b'se u can use pre cooked rice that is left over.

  • Prep: 5 hrs
  • Cook: 12 hrs


1 cup Rice, cooked

3 tbsp Coconut oil

1 tsp Mustard seeds

1 tbsp Channa Dal

1 tbsp Urad Dal

10 Curry Leaves

4 tbsp cashew pieces

salt to taste

1/2 lemon to taste

1/4 tsp turmeric


7 Cilantro, minced


1Heat Oil in a Pan

2Add Mustard Seeds and wait till it pops

3Add Urad Dal and Channa Dal and mix until it turns golden brown

4Add Cashew Nuts and also roast till slightly browned

5Add curry leaves and turmeric powder to mix.

6Now add Cooked Rice, Salt and mix for approximately 2 minutes

7Squeeze lemon to taste

8Finally top with Cilantro to garnish. Mix and serve to enjoy
